Ingredients

  • 270g soft Fairtrade brown sugar
  • 200g very ripe Fairtrade bananas, mashed (the riper the better)
  • 280g plain flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 2 large Happy hens eggs
  • 140g unsalted butter, melted
  • Maple butter to serve

This lovely Fairtrade banana cake is a fabulous way to use up any leftover bananas.

METHOD

Preheat the oven to 170°C.

Put the sugar and eggs in a freestanding electric mixer with a paddle attachment and beat until well incorporated, then mix in the mashed bananas.

Sieve the flour, baking powder, baking powder, cinnamon and ginger add to the mixture. Mix thoroughly until all the dry ingredients have been incorporated into the egg mixture.

Pour in the melted butter and beat until all the ingredients are well mixed.

Pour the mix into a prepared loaf tin and smooth over with a palette knife. Bake in a preheated oven for about 1 hour or until firm to the touch and a skewer inserted in the centre comes out clean.

Leave to cool before turning out.

Serve warm or try toasting in a panini grill and spread with a maple butter.
