Apple and walnut cake

Method

  1. Roast the apple at 180°C for 1 hour or until almost burnt, then blitz until smooth with the walnuts.

  2. Once the apple mix has cooled, mix with the eggs, and then slowly mix in the dry ingredients.

  3. Pour into greased mini muffin moulds and cook at 160°C for 15 minutes. Alternatively, you could use a half gastro tray if you don’t have the moulds and cut it into portions. You would need to add 10 minutes to the cooking time.

  4. You can double the recipe and make one large cake, but you will need to cook it at 150°C for 35 minutes or until it is fully cooked.
