Baby Cucumber Pickle

Make the most of the tasty cucumber this summer, with this fabulous, easy to do, recipe which is perfect all year round.


  1. Stab a few holes in the cucumbers using a small knife or a skewer and set aside.
  2. Place all other ingredients in a pan and bring to a boil, add the cucumbers and the onion and simmer for 5 minutes then transfer to a container. Push down with your hands to ensure they are covered.
  3. Leave in the fridge overnight.
