Baby Cucumber Pickle

Ingredients

½ onion, finely sliced

4 baby cucumbers

20g salt

120ml white wine vinegar

80g brown sugar
-
1g turmeric
-
1 clove
-
1g mustard seeds
-
1g fennel seeds
-
1g coriander seeds
Make the most of the tasty cucumber this summer, with this fabulous, easy to do, recipe which is perfect all year round.
METHOD
- Stab a few holes in the cucumbers using a small knife or a skewer and set aside.
- Place all other ingredients in a pan and bring to a boil, add the cucumbers and the onion and simmer for 5 minutes then transfer to a container. Push down with your hands to ensure they are covered.
- Leave in the fridge overnight.
