• 1kg courgettes, chopped
  • 500g ripe tomatoes, chopped
  • 250g onion, chopped
  • 2 cloves garlic, chopped
  • 60g currants
  • 500g brown sugar
  • 30g salt
  • 2tsp ground ginger
  • 2tsp black pepper
  • 2tsp coriander seeds
  • 400ml white wine vinegar
  • 100ml malt vinegar

What do you do with all those leftover courgettes? This courgette chutney is a tasty and easy way to preserve and enjoy them throughout the winter.


  • Place all the ingredients in a heavy bottom saucepan.
  • Bring up to the boil, then simmer for 1 hour until all items are fully cooked.
  • Blend or mash according to your preference.
  • Pour into a sterilised jar, filling to the top.
