- 4 lemons
- 250g caster sugar
- 500ml double cream
Easy to make and a perfect with shortbread, this recipe for lemon posset will be loved by everyone.
- Zest 1 of the lemons,
- Juice all the lemons.
- Heat the cream and the sugar gently on the hob, bring to a simmer and allow to bubble for 1 minute.
- Remove from the heat and mix in the lemon juice and the zest and divide between 5 glasses.
- Allow to cool for 5 minutes and place into the fridge for at least 3 hours
