Ingredients

  • swede about 500g)
  • 85g butter
  • 200g water
  • Sea salt
  • Fresh ground black pepper

Method 

Peel the swede using a peeler or a sharp knife and cut into 4 easy to handle chunks.

Grate it on a cheese grater using the largest of grate option and put directly into a sauce pan.

Add the butter, water and a couple of good pinches of salt to the pan and place over a medium heat. It will look like there is not enough water but trust me.

As the swede starts to heat up, stir with a spoon to ensure the butter is melting and the salt gets mixed in. Press the swede down using the back of a spoon. You will see that the water in the swede will start to come out and the swede will start to break down.

Continue to cook for about 5-8 mins stirring and pressing down as needed. Give it a taste and you will the swede should be perfectly cooked but not turning into a purée.

Drain off any excess liquid, but make sure you keep enough in the pan to glaze and add moisture.

Check the seasoning adding salt and add pepper to taste, I like quite a lot!

Serve straight away
