Sticky toffee pudding sauce

Rich and buttery, this classic sticky toffee pudding sauce comes together in just five minutes with only three ingredients. Perfect for drizzling over sticky toffee pudding, pouring onto ice cream or serving alongside warm sponge puddings, it’s a simple, comforting recipe.

Method

  1. Place the dark soft brown sugar, double cream and butter into a medium saucepan.

  2. Set over a medium heat and stir continuously until the butter has melted and the sugar has fully dissolved.

  3. Bring the mixture to a gentle boil and cook for 5 minutes, stirring occasionally. The sauce will become smooth and slightly thickened.

  4. Remove from the heat and leave to rest for 2 to 3 minutes. If you’d like a thicker consistency, return the pan to the heat for a further minute or two. If the sauce is thinner than you’d like, whisk 1 tsp cornflour or arrowroot with 1 tbsp cold water and stir into the simmering sauce until thickened.

  5. Serve warm over sticky toffee pudding with plenty of vanilla custard, or allow to cool before storing.

Storage

Store in an airtight container in the fridge for up to 5 days. Reheat gently in a saucepan or microwave until warm and pourable.
