Nova’s Biscuit & Bun Co. takeover is turning heads in Farringdon

If you’ve been anywhere near Farringdon lately, chances are you’ve caught the buzz, or at least the smell, wafting from the doors of Nova Coffee & Bakery. For the past few weeks, Nova has been home to a bold and buttery takeover by Biscuit & Bun Co., and it’s been nothing short of a sensation.
So much so, in fact, that what was planned as a two-week showcase has already been extended. Why? Because the cinnamon buns barely last an hour, the biscuit sandwiches have become a lunchtime ritual, and every day brings something fresh, inventive, and utterly irresistible.
Mornings made sticky (and sweet)
Each morning starts with a bakehouse buzz. The scent of warm cinnamon, sticky toffee, and pecan pie buns greets early risers. Alongside these headline acts, you’ll find beautiful Luminary pastries, all baked in-house and served fresh from the oven.
Our team crafts each item in limited numbers to keep things fresh, exciting, and full of flavour—get them while they last. That’s part of the charm.
Lunchtime gets a southern twist
By midday, the menu shifts gears. Enter the American-style filled biscuits. Think scones, but butterier, flakier, and packed with savoury fillings. Each one is named after a cult film or pop-culture reference, adding a playful twist to the offering.
Expect bold combinations like juicy tomato-ponzu chicken or rich pork patties stacked with slaw, served hot, fresh, and changing weekly. These biscuits have quickly become local legends.
Seasonal thinking, creative doing
The Biscuit & Bun Co. team has leaned into what’s seasonal and fresh, allowing the menu to evolve throughout the takeover. Pastries are even transformed mid-day into special creations like honey butter toast with mascarpone, mango, and blackberries.
This flexible, creative approach is at the core of Nova’s food ethos: quality over quantity, with an emphasis on craft, curiosity, and culinary fun.
Meet the team behind the takeover
Behind the magic was Pete, heading up the operation, supported by a team of talented chefs including Daryll, Darren, Sunil, and Phil, along with Nova’s brilliant female manager and barista.
Collaboration was at the heart of the effort—kitchen, front of house, and local suppliers all pulling in the same direction..
Powered by incredible producers
This takeover celebrated not just Nova’s creativity, but the exceptional ingredients from our trusted partners, including:
-
Wildfarmed Flours, bringing natural regenerative flour to the shopfront
-
Sushi Sushi UK, whose ingredients added a savoury punch
-
Lake District Farmers, providing the premium pork patty
-
Vegetarian Express, Nova’s newest fresh veg supplier
Together, they helped elevate each item on the menu—adding colour, depth, and a story behind every bite.
What’s next at Nova?
With the runaway success of the Biscuit & Bun Co. takeover, Nova is already planning its next bold move. Whether it’s another pop-up, a new seasonal menu, or another cult classic collaboration—you can bet it’ll be creative, considered, and completely worth a trip.
