This year, we’re delighted to celebrate three of our incredibly talented chefs who’ve each been with us for ten years. Their stories are a reflection of what makes us more than just a workplace—we’re a family.

A decade of passion: Meet Dayrll, Scott, and Sunil

When you find the right place, you stay and for three of our chefs, that’s exactly what’s happened. Ten years on, they’ve grown their careers, built lasting friendships, and created plenty of brilliant memories along the way. Here’s what they had to say about the journey so far.

Dayrll’s story: From temporary plans to a lifelong journey

“I started with Bartlett Mitchell just over 10 years ago with the intention of doing 8 months and then taking some time off to travel,” Dayrll shared.


That plan changed quickly. Starting as a Head Chef in Earls Court alongside fellow chef Scott Furbach, Dayrll found a professional home at BM. He later moved on to Canary Wharf and eventually joined the development team, where he still thrives today.


“I don’t think there has been one highlight due to the number of great times I’ve had over the years. But one moment stands out—last year, on a hill in Cumbria, overlooking Lake Windermere, with a sheep farmer named Eric and a group of chefs, enjoying cakes made by his wife. I thought, ‘I’m getting paid to do this?!’”


Dayrll is now focused on ensuring our chefs get the same opportunities and career development that shaped his path.

Scott’s journey: From agency work to mentoring others

“I started as agency at Kensington Village when Pete Redman and Darren Collier were opening the site,” says Scott.


He joined the team as a Sous Chef, where he and Dayrll had full creative control, laying the foundation for what became a dynamic, rewarding career. Scott went on to support the talent team, helping open sites and contributing to sales presentations and tenders.


“I then became an Executive Chef for before the pandemic hit. Thanks to Pete, I joined the senior team during that turbulent time.”


Post-COVID, Scott returned with renewed energy and focus, working alongside Dayrll and others to help mentor rising talent.


“I’d like to believe I’ve had a positive impact on the chefs and teams I’ve helped mentor and develop over these ten years.”

Sunil’s story: Growing with friends

Sunil’s journey began at MTV Viacom in Camden as Head Chef. His path included time at various sites, before moving into the development team—where he now shines as our head pop-up chef .


“There are so many highlights, but what stands out most is seeing good friends and colleagues grow alongside me. That kind of bond makes BM feel like a real family.”

It’s a culinary community
