  • 55g plain flour
  • 285g wholemeal flower
  • 60g chopped dried apricot
  • 60g raisins
  • 40g muesli of your choice
  • 13g bicarb
  • 8g salt
  • 25g walnuts
  • 25g hazelnut
  • 85g pecan nut
  • 100g pumpkin seeds
  • 100g sunflower seeds
  • 125g golden linseeds


  1. Mix all the dry ingredients together in a large bowl. In another bowl, mix the wet ingredients together.
  2. Pour the wet ingredients into the dry mix and combine. Mix so there are no lumps of flour left.
  3. Line your choice of loaf tin with non-stick parchment paper or grease with butter. Fill your tin to approximately 80%. 
  4. Sprinkle some extra seeds on the top and bake in the oven at 150°C for 1 hour.
  5. After an hour check by placing a skewer into the centre of the loaf. If the skewer comes out clean then remove and allow to cool. If not add 10 minutes to the baking time until skewer comes out clean.
