Banana jam

Banana Jam Recipe

A delicious way to use up overripe bananas, this banana jam is buttery, caramelised, and perfect on toast or stirred through porridge.

Method

  1. Peel and roughly dice the overripe bananas.

  2. In a medium saucepan, melt the butter over medium heat until it starts to brown slightly and gives off a nutty aroma.

  3. Sprinkle in the caster sugar and let it begin to caramelise – it should start to turn golden.

  4. Add the diced bananas and stir well to coat in the butter and sugar.

  5. Cook on a low to medium heat for around 10 minutes, stirring frequently, until the bananas break down and the mixture becomes thick and jammy.

  6. Set aside to cool slightly.
