Banana jam

A delicious way to use up overripe bananas, this banana jam is buttery, caramelised, and perfect on toast or stirred through porridge.
Ingredients

3 overripe bananas, diced

50g unsalted butter

75g caster sugar
Method
Peel and roughly dice the overripe bananas.
In a medium saucepan, melt the butter over medium heat until it starts to brown slightly and gives off a nutty aroma.
Sprinkle in the caster sugar and let it begin to caramelise – it should start to turn golden.
Add the diced bananas and stir well to coat in the butter and sugar.
Cook on a low to medium heat for around 10 minutes, stirring frequently, until the bananas break down and the mixture becomes thick and jammy.
Set aside to cool slightly.
