Carrot Hummus

Ingredients

1 kg carrots
-
4 cloves of garlic
-
100g sesame oil
-
50g lemon juice
-
30g sesame seeds
Adding thoughtful and delicious sides to your main dish is an easy way to increase your fruit and vegetable intake. This Carrot Hummus is perfect as a side or as a snack.
- Place the carrots in a baking tray and cover with foil and roast until soft
- Place in a blender with the garlic and lemon juice and blend on full power
- Drizzle in the sesame oil and continue to blend until smooth
- Season with salt
- Toast the sesame seeds in a frying pan until light brown in colour
- Transfer the hummus to your serving dish and scatter over the sesame seeds
