Creamy whipped feta cheese salad (Tirokafteri)

A creamy, tangy whipped feta salad inspired by classic tirokafteri. Smooth, savoury and perfect for sharing with warm bread.

Ingredients

400g feta cheese

150g Greek yoghurt

Zest of 1 lemon

1 grilled chilli, seeds and skin removed

1–2 tbsp cold water, as needed

50g olive oil

1 tsp vinegar (white wine or cider)

Pitta or flatbread, to serve
Method
Crumble the feta and add it to a food processor.
Add the Greek yoghurt, lemon zest, grilled chilli, olive oil and vinegar.
Blend briefly, then drizzle in 1–2 tablespoons of cold water while blending, until smooth and creamy. You may need a little extra water depending on how dry the feta is.
Blend until you reach your preferred texture — rustic or silky smooth. A slight graininess is normal due to the feta.
Tear pitta or flatbread into pieces by hand and serve alongside the whipped feta.
Notes
Serve as a dip, spread or mezze-style plate. Finish with extra olive oil, fresh herbs or chilli if you like. This pairs well with breads, crackers or crudités.
