
Ingredients
- 1 packet of ready rolled puff pastry
- 15g unsalted butter
- 100g dark brown sugar
- 160g currants
- 2g or 1 teaspoon allspice
- 2g or 1 teaspoon nutmeg
- 1 egg lightly whisked with a folk
Bursting with taste these eccles cakes are really easy to make and can be made in advance of any celebration.
Method
- Melt butter and then add the currants, nutmeg, and allspice, then allow to cool
- Cut the pastry into 10 discs
- Place a large spoonful of the currant mix in the centre of 5 of the discs and brush edges with egg and place another disc on top and seal
- Brush the top with the egg and bake at 175˚c for 15-20 mins
- They should be golden brown, if they are not place back into the oven for another 5 minutes
