Ingredients

  • 1 packet of ready rolled puff pastry
  • 15g unsalted butter
  • 100g dark brown sugar
  • 160g currants
  • 2g or 1 teaspoon allspice
  • 2g or 1 teaspoon nutmeg
  • 1 egg lightly whisked with a folk

Bursting with taste these eccles cakes are really easy to make and can be made in advance of any celebration.

Method

  • Melt butter and then add the currants, nutmeg, and allspice, then allow to cool
  • Cut the pastry into 10 discs
  • Place a large spoonful of the currant mix in the centre of 5 of the discs and brush edges with egg and place another disc on top and seal
  • Brush the top with the egg and bake at 175˚c for 15-20 mins
  • They should be golden brown, if they are not place back into the oven for another 5 minutes
