This lovely banana cake is a fabulous way to use up any leftover bananas.
Ingredients

270g – soft brown sugar

200g – very ripe bananas, mashed (the riper the better)

280g – plain flour
-
1tsp – baking powder
-
1 tsp – ground cinnamon
-
1 tsp – ground ginger
-
2 – eggs
-
140g – unsalted butter, melted

23x13cm loaf tin
Method
- Preheat the oven to 170°C.
- Put the sugar and eggs in a freestanding electric mixer with a paddle attachment and beat until well incorporated, then mix in the mashed bananas.
- Sieve the flour, baking powder, baking powder, cinnamon and ginger add to the mixture. Mix thoroughly until all the dry ingredients have been incorporated into the egg mixture.
- Pour in the melted butter and beat until all the ingredients are well mixed.
- Pour the mix into a prepared loaf tin and smooth over with a palette knife. Bake in a preheated oven for about 1 hour or until firm to the touch and a skewer inserted in the centre comes out clean.
- Leave to cool before turning out.
- Serve warm or try toasting in a panini grill and spread with a maple butter.
