Heritage Tomato Salad

A vibrant and refreshing salad that celebrates the natural flavour of heritage tomatoes. Perfect as a seasonal side or light main dish.
Ingredients

500g ripe heritage tomatoes (halved)

A small handful of flat-leaf parsley, finely chopped

A good pinch of sea salt

A generous splash of good-quality extra virgin olive oil

1 pickled onion, very finely sliced

1 small gherkin, finely sliced

A couple of handfuls of fresh watercress, washed and tough roots removed
Method
Slice the heritage tomatoes into bite-sized pieces and place them in a mixing bowl.
Add the chopped flat-leaf parsley, sea salt, and a generous splash of extra virgin olive oil. Gently toss to combine.
Finely slice the pickled onion and the gherkin. Add both to the bowl and mix gently.
Add the washed watercress, removing any tough roots or stems. Fold through carefully.
Leave the salad to rest at room temperature for about 30 minutes to allow the flavours to develop.
Transfer to a serving bowl and enjoy.
