Ingredients

  • Blue Butterfly Pea Flower tea bags (available from Amazon)
  • Passionfruit Syrup (available from Monin, Tessier and Lakeland)
  • Dilmah T Series Brilliant Breakfast tea bags (or any other Breakfast tea)
  • Sparkling water
  • 1 lemon
  • 4 large champagne flutes
  • Lemon or edible flowers to serve

If you’re looking a gorgeous mocktail to enjoy this Jubilee weekend, give this specially created Platinum Jubilee tea mocktail a try. It was created by our wonderful Tea Sommelier, Jane Milton.

Method

  • 3- 4 hours ahead of time – Brew up Dilmah T Series Brilliant Breakfast tea made with 2 tea bags and 200ml water.
  • Let it brew for 5 minutes, remove the tea bags, allow to cool and refrigerate until required.
  • At the same time brew 2 tea bags of Blue Butterfly Pea Flower Tea in 200ml water
  • Let it brew for 5 minutes, remove the tea bags, allow to cool and refrigerate until required.
  • Leave 3- 4 hours
  • Fill 4 champagne flutes with ice, pour in 50ml of chilled Brilliant Breakfast Tea.
  • Add 50ml Blue Pea Flower Tea, a small squeeze of lemon juice, 20ml of passionfruit syrup and top with sparkling water.
  • Garnish with a twist of lemon rind, a slice of lemon or some edible flowers
  • Serve and enjoy!
