
Ingredients
- 600g bread flour
- 350g water (about 50 degrees c)
- 15g fresh yeast (or 10g dried)
- 45g olive oil
- 30g salt
- 15g sugar
- 60g melted butter
- 5 litres water
- 125g bicarb soda
- Sea salt
- 3 eggs
I discovered pretzel burger buns on holiday and pair them with turkey and melted cheese, they also go really well with barbecue beans!
Method
- Dissolve the yeast into the water
- Mix the flour, sugar, butter, oil, yeast and water in a machine for 10 minutes, until smooth
- Leave for 10 minutes
- Add the salt and mix for another 2 minutes
- Divide the dough into 100g balls and leave to prove uncovered (this allows a crust to form)
- Boil the 5 litres of water then add the bicarb and remove from the heat
- Whisk the eggs
- When the buns have proved, boil the water again and poach the buns for 1 minute
- Remove the buns, brush with the egg, score with a sharp knife and sprinkle with salt
- Bake for 12 minutesΒ at 180c or until dark brown
