Ingredients

  • 600g bread flour
  • 350g water (about 50 degrees c)
  • 15g fresh yeast (or 10g dried)
  • 45g olive oil
  • 30g salt
  • 15g sugar
  • 60g melted butter
  • 5 litres water
  • 125g bicarb soda
  • Sea salt
  • 3 eggs

I discovered pretzel burger buns on holiday and pair them with turkey and melted cheese, they also go really well with barbecue beans!

Method

  • Dissolve the yeast into the water
  • Mix the flour, sugar, butter, oil, yeast and water in a machine for 10 minutes, until smooth
  • Leave for 10 minutes
  • Add the salt and mix for another 2 minutes
  • Divide the dough into 100g balls and leave to prove uncovered (this allows a crust to form)
  • Boil the 5 litres of water then add the bicarb and remove from the heat
  • Whisk the eggs
  • When the buns have proved, boil the water again and poach the buns for 1 minute
  • Remove the buns, brush with the egg, score with a sharp knife and sprinkle with salt
  • Bake for 12 minutesΒ  at 180c or until dark brown
