Ingredients

  • 225g plain flour, plus 10g for dusting
  • 75g caster sugar
  • 1 vanilla pod
  • 150g unsalted butter at room temperature
  • 50g granulated sugar for dusting

Super easy and perfect with a cup of tea, this recipe for Shortbread is a must have for any Jubilee celebration.

Method

  • Place all the ingredients into a mixing machine with the paddle attachment, apart from the granulated sugar.
  • Slowly mix until combined into a dough.
  • Wrap in cling film and place into a fridge for 30 minutes.
  • Lightly dust a table with plain flour and roll in to a 22cm square then cut into the shape that you want.
  • Place onto a tray with parchment paper and bake at 160ΒΊC for 20 minutes.
  • Remove from the oven and dust with granulated sugar.
  • Leave to cool for at least 15 minutes, this will allow the shortbread to set.
