Ingredients

  • 140g plain flour
  • 20g cocoa powder
  • 200g caster sugar
  • 80ml vegetable oil
  • 1 tsp. vanilla extract
  • 200g dairy free dark chocolate chips
  • 240ml unsweetened almond milk

These delicious chocolate fudge brownies are perfect warmed up and served with a big scoop of (vegan) ice cream. They can be adjusted to suit your taste, add in extra zest of orange to make a chocolate orange brownie or even fold in some frozen raspberries to add some extra freshness to them.

Method

  1. Preheat the oven to 180oC / 160oC fan / gas mark 4. Line an 8” square baking tin with greaseproof paper.
  2. In a mixing bowl, combine the flour, cocoa powder and sugar then whisk together to combine.
  3. In a separate bowl, mix together the oil, vanilla, chocolate and almond milk.
  1. Fold the 2 mixes together, pour into the baking tin and sprinkle over a handful of chocolate chips (optional).
  2. Place in the oven for 20-25 minutes. The centre should still have the slightest wobble.
  3. This can be served warm or place in the fridge for the brownie to firm up; this will make the brownie more fudge like in texture.
