London Smoke & Cure is an independent Bermondsey-based smokery producing British charcuterie and traditionally smoked foods by hand.
Founded in 2015 by Ross Mitchell and joined soon after by Jamie Beevor, the business operates from its South London smokehouse, crafting small-batch products using carefully sourced British ingredients. Known for skilled curing and smoking techniques and a close connection to London’s food scene, the team work directly with chefs and food professionals to deliver exceptional quality and depth of flavour.
Craft-led, small-batch production
Working with a small, experienced team, London Smoke & Cure oversee every stage of production themselves – from sourcing raw ingredients through to curing, smoking and finishing each product by hand. This careful, small-batch approach allows for an exceptional level of consistency and quality, with meticulous attention paid to detail at every step.
At a time when most traditional smoking has moved out of major cities, London Smoke & Cure remains one of the few small-scale smokeries still operating within central London. Their Bermondsey location keeps them closely connected to the capital’s food scene, enabling direct collaboration with chefs, retailers and food professionals while preserving a tradition of urban food craftsmanship that has largely disappeared.
British provenance at the core
British provenance sits at the heart of everything London Smoke & Cure do. Ingredients are sourced from trusted British farms and producers, chosen for their quality, ethics and consistency. Each product is prepared in small batches using time-honoured curing and smoking techniques, refined carefully to meet modern standards and contemporary tastes without losing the depth of flavour these methods are known for.
Traditional methods form the foundation of their work, but never at the expense of quality or relevance. The result is charcuterie and smoked foods that feel both authentic and modern, balancing technical skill with a genuine respect for ingredients.
Made by hand in Bermondsey
Every product is prepared, cured and finished by hand at London Smoke & Cure’s Bermondsey site. By keeping production in-house and at a manageable scale, the team maintain control, care and consistency throughout the process. This hands-on approach ensures every cut, cure and smoke delivers the same high standards their customers expect.
